What we are trying to do is to be able to see on our calendar which days subcontractors will be on a jobsite as opposed to our own employees.

You would still need to add them as users but you create them just make sure 'User can sign-in (counting toward my paid licenses)' is unchecked.

2. How can we assign our own equipment to a particular work order?

For example if we have a work truck, and we want it at Job A on Monday and Job B on Tuesday.

You can set equipment in Method in the add/edit work order screen by going to the Tasks and Materials tab section and clicking on the gear icon at the bottom of the grid, you can make the equipment column visible here.

Other then this you will have to customize your screens to add this.
