Yeah, so it turns out my users were not being completely upfront about what they were actually doing in Quickbooks (despite having some very convincing screenshots). This is definitely a situation where they are trying to convert an Item Receipt into a Bill.

It sounds like you want to customize the screen and take out some of the fields you do not need. You can do this by copying the proper Lead screen (with selecting 'replacing links to an existing screen') so you can edit it. You will do this in the Customize tabs -> Screens ...

Okay, then I'd employ the suggestion from the other post about show/hiding grids based on the logged in user. For your grid that can add/update/delete, take a look at how the InvoiceLine grid functions. You can reverse engineer that screen to see how to set the grid up.
