For anyone following this post, the field CRMActivityDefaultActivityType can be found in the Users table. Regenerating this table solved the issue.

Unfortunately in order for these tags to show up correctly in Listbuilder for Leads, you would need to manually add them from the EditContact screen for each Customer Lead. If I can get any further information on this, I will reply directly to this thread.
