Hi Alex,
As you found, you can hide the Rate and Amount fields when the screen first loads. Unfortunately, I don't see a way to hide individual columns from certain users.

Can you test out the stock QuickBooks_Invoice screen as well? You can test out the stock screen by going to Customize > Screens > search for QuickBooks_Invoice > highlight the mouse over the name then click View on the left side of it.

We do not use specific times when scheduling items and do not have a need for and end date, as everything is a day event. Can I get rid of the end date and how can I customize the start date to be date only. Also, can it show the day of the week (i.e., Monday, 6/3/2013)

Looks like Alex is correct. I tested this out and it seemed to fix the problem. Copy and edit the FieldServiceMOB_WorkOrders screen and edit the ActivityJobItem grid in the Items section. You'll see the option for Auto Grow. Click that checkbox and you should be good to go!
