Either Tags or a Custom field would work fine for your purpose here. Although I would say tags would be a more robust option considering you are trying to categorize your contacts by multiple metrics.

Thanks for reporting this one - I'll make sure to bring it up with our product team for a future iteration of the screens.
All the 'List' screen Views are filtering out the App Specific Activity Types, so it would be good to keep the consistency.
