Hey Jason,
Those fields are pulled straight from QuickBooks. You should be able to modify them under 'Company Information' in your QuickBooks file.
After modifying the fields, execute a Sync. Try that and follow up if it's still displaying incorrectly.

This is actually better handled through custom fields in QuickBooks. Open any customer for editing the click into the Additional Info tab - there's section on the right hand side that says custom fields. Here's my answer. As far as the the sync engine is concerned the speed depends on the Quickbooks SDK, the engine will work according to the properties of the quickbooks SDK.

Method currently does not have the ability to sync with the Quickbooks Advanced Inventory feature. 3rd party applications are not able to access/sync with this information from Quickbooks, this will likely be available in the future.

The development team is investigating this and are currently determining the scope of the fix. This may be a large project requiring an update to the Method Integration Engine and as such, I can’t make any promises that this will be resolved shortly. It really depends on the scope of the project.
