The original esimates page is called QuickBooks_Estimate and my copy is currently 13 days old.  Everyone should have the same copy of these pages unless you're using an older version of Method.  Can I confirm the last modified date on this page is 13 days?  If you click view on this screen you should be viewing an original ...

So I followed your instructions and under Customize, tabs, tab links for Customers. Estimates box says Quickbooks_Estimate. Any suggestions as to what we need to do to get the original estimate back? What should the original estimate named?   Chris

Yes, it's still happening. 

I have accessed Method using an iPad and everything seemed to work pretty well on the full site except for creating a New Activity.
