Try regenerating the Entity, Customer, and Opportunity tables. To regenerate a table go to Customize > Tables/Fields > click the name of the appropriate table, i.e. Entity > then click Finished Editing Fields. Before doing this, make sure no one is editing any tables or screens in your account.

There has been a ticket logged for this exact scenario. What you can do in the meantime is click the Refresh icon on the bottom right hand corner of the grid. I'll update this post once the issue has been addressed.

Yes this can be done. Keep in mind that the job name will change for the entire series and all occurrences still connected to the series, so if an occurrence is broken from the series then its job name won't update.

I created the same actions you have and it works correctly. Message appears when the box is clicked to set the value to True, but not when clicking and setting value to False. Also when the message pops-up, when I select 'Ok' or 'Cancel' the correct values are assigned to the action result, i.e. YES or NO.
