Had you already changed the AsOfDate that day, perhaps earlier when you entered the day's ExchangeRate? Is it not syncing at all, or is it incorrect in some way?

1) If you've created an Email field in the Estimate table, it will only be available in screens based off of that table. You'll have to add an Email field to the Invoice table if you want one available there as well.

The Cases screens isn't set up to use the merge function based on the Contacts table. If you wanted to use Contacts.Email instead of Cases.ContactEmail, you'd have merge that table into the Email function of your New & Edit Cases screens. Although possible, to implement that much detail in one of our Web-To-Lead forms would be quite complicated, and likely take up a lot of space on screen. I believe this is something that would be easier to accomplish down the road, using Method:New's Public Pages.

I should also mention, you can temporarily full-screen the HTML Editor by pressing the icon on the toolbar. Once you're done composing your message, click it again and it will return to its original dimensions.
