I just want to point out that to copy a screen the users will have to have Method CRM Pro and also you would need to get access to their password to copy the screen over to your account.

-You can receive the payment through Method like you do QB but to actually process them with a gateway you would still have to be signed up with a gateway as Method doesn't have its own payment gateway.

Which screens are not displaying '$'? I tried duplicating this but was unable to. Can you enable MethodSupport by checking Active under Customize > Users and email me your account name so I can take a look.

I am going to chime in here and hopefully clear up some confusion.
I think you are filtering by the wrong field, you should probably be creating your filters based on the OpportunityStage field and not the OpportunityStageCategory field.
For OpportunityStageCategory there only only 3 options 'Closed Won', 'Closed ...

Looking at the graphs on the Home Dashboard screen, they are filtered so that any Opportunity Stage that has a Opportunity Stage Category containing the word "Closed" should not show up.

I am not sure if what you are trying to do will work but I can point in the right direction on where to setup payment gateways as a whole.
In Method go to Customize > My Account and you should see an option for Payment Gateways under the Change My Account Preferences section. Outside of this there is currently no other options ...

Now in Method if you enter a value into a drop down that does not exist in the drop down and click Save you will get a warning. This should address your issue.
