Hi Cameron,
Sorry for the late reply. There is an action in the Clear / New button (within the More Actions... button, listed as an Event) that sets the Activity Status dropdown to "Completed". This action set gets called on screen load, so this is why you're experiencing this issue.
Go ahead and change action 5 in this list ...

Since not all users use Estimates, I don't think this is something we'll add as a feature. It's definitely something you could accomplish through customization, however.

You can do this by filtering the export with a script. We have a Help Center article that explains how to do this here. It uses some other date fields in one of its examples.
