Currently I have a screen called "Email Type Menu" and a text field that can add or delete options in a grid. Both my Shipment and Email sent screens have fields linked to the grid called Email Type

I'm glad to hear that. Also if you leave the From field blank on your email template it will use the email address for whatever user is currently logged in.

Its in the emails. Send out an email with a merge field in the subject line and it doesnt populate with the information.
