Hi Conner,
Go into the Advanced Screen Properties and add an OnScreenLoad Action 'show/hide field/object' that hides the label, for the Options choose Always Hide.
For the Checkbox add a Click Action 'show/hide field/object' for Field/Object choose the label and Options choose Toggle.

Hey Lex,
Head over to Customize > Tabs > Edit Tab Links... beside the Tab you wanted. For Credit Memo you would choose Edit Tab Links... to the right of Customers.
In the Tab Links pop-up you can just click on the checkmark to show or hide.

Hey Lex,
There is no way you can choose multiple options from a drop down.
You can however, add multiple drop downs to the screen that is pulling the same field.
There is also the option of creating a detail table, for example take a look at the Invoice and LineItems and how you can add multiple Items.

Hey Conner,
From what I understood you want the grid to show:
Company 1 - Contact 1
Company 1 - Contact 2
Company 2 - Contact 1
If I am correct you can achieve this by adding the CompanyName field to the grid. Also on Step 4 of the Grid Wizard you will want to Sort first by CompanyName (A to Z).
