I would contact your email provider and have them provide you with the smtp server you need. You will also need them to enable Open Relay on the email server. You can find more information on this on our Help Center: Why are emails from Method not being sent?

You can make a partial payment. They will just need to select the invoice they wish to pay and the amount. The balance will reflect the partial payment.

Are you setting these appointments up in Outlook? Outlook will default to 12am - 12pm for all day events. If you are using the Outlook gadget, this may be why Method sends the email out at close to midnight. You can change those defaults. I don't believe you can change when a reminder email is sent. The default is 15 minutes before the activity is due (according to the Due On date and time). How are your appointments created?
