I tried to reproduce it on my account by going to ListBuilder -> Click on Fill List with Contacts -> Click on Insert Contacts it takes me to the Step 2:Edit your List and it is working fine without any error. Is there's something different you are trying?

Here's my answer. The Listbuilder takes fields from the Contacts table and inserts values into the fields that match in the Listbuilder table. You can add fields to the Contacts table, then add a field of the same name to the Listbuilder table. Then when you insert, the matching field will populate in ...

Can you please confirm, what kind of fields you added in the Customer table? Were they dropdown fields or other field types? Did you add those fields on the Screen?
