Hi Lance,
Try a basic sync test by adding a fake customer directly in QB and cconfirm the change makes it's way to Method as expected. Follow up by modify info for the same customer (e.g. phone) on the Method side and confirm this made it's way to QB.
Assuming the above works, the issue you are experiencing could be that you are adding a new contacts to an existing customers on the Method side. Any new contacts added in Method will be Method only contacts and are not designed to sync to QB.
