Hello, our contact data is currently stored as organisation details at the customer level and then the employee (s) detail at the sub customer level within QBOL. Can we create this view within the contacts overview?

Unfortunately, on the UI level, this is not possible. However, we do have the ability to create sub-customers in Method. The way they will show up is like Customer: SubCustomer.
