I'm looking for the easiest way of sending an email template from a mobile screen.

It will be a custom template for emailing work order details to a customer.

I've had a look at the send mail events and actions on the 'CRM_NewActivity' screen, but these seem over complicated for what I need.

The easiest way to do this would be to reverse engineer the actions for the Save button on the CRM_NewActivityScreen. You won't need all the actions, just the one's specific to the email fields and Character Function actions. Keep in mind that you will need to add some additional fields to your mobile screen so it will increase load times. Additionally you will need to create/customize your own template and use the appropriate merge field terminology.
