I think the best way to describe this is with an example. A lawn care company may have a series of occurrences for each client. Due date start could be used for when they start each job, and due date end could be used for when they should approximately finish the job, in this case probably a few hours later. If you don't use the DueDateEnd field you can easily hide it from the Activity list by clicking the settings gear on the bottom right corner of the Activity grid. See the attached image. Additionally, you could customize your FieldService_AddEditWorkOrder screen to completely remove the field from the edit screen. Let me know if you need more assisstance with this.
