Hey Chris,
Is this still happening today? If so then try regenerating the Entity and Customer tables, along with the table which the Dropdown field pulls data from. To regenerate a table go to Customize > Tables/Fields > search for the table and click on it > when the new screen pops up, click Finished Editing Fields. Try editing a customer record and let me know the outcome.
