Hi Nick,
This can be done a number of different ways. I'd recommend creating a screen with a grid that shows all of your opportunities (you can even edit the existing Opportunities screen). Include a checkbox in the grid and have a button on the screen to delete the opportunities. The actions on the button will be similar to the post found here. You can use the Loop through grid to loop through only checked rows of the grid and delete each checked row.
