Hey Neil,
In order to attach a Method document of your choosing to an email, you would need to create a new screen based off the DocumentLibrary table and utilizing the Document object. This is a topic that his been discussed quite a bit and we have submitted feature requests to our dev team.

We can do that with Method, I would categorize it under Intermediate to Advanced.
There a few different routes to take. here is one approach working with the Contacts Table:
1) Add a Grid object and attach a Filter to the Grid: (where 'Tag' = to the Tag you have chosen)

How true is your statement? I just updated the form in Method (changed the internal email receipeint), but I did not update the form on my web page, and it seems to be sending the web lead email to the correct internal user.
