Method Community

Does anyone know how to conditionally allow or disallow grid updating?  i.e. use an action to overide the grid setup. I have a customer who wants the ability to edit a sales order detail grid (this is standard) but after the order has shipped they want to prevent the sales order details from being changed. 

I'm not sure if this is something that can be implemented into Method or not, but I had an idea today and thought I'd make a suggestion. Michael, I'm afraid I may have lost you there. I am in the customization tab, editiing the screen -> grid, but do not see any way to add columns.
