If you have a grid base on the activities table but I want to add fields from the customer table, how do I do this?

You can do this by adding a linked field from the Entity table into the Activity table. Go to Customize>Tables/Fields and click on Edit Fields... for the Activity table. Click the radio button called Add a Linked Field. If you cannot see your table in the Link Using: field you may need to establish a relationship with it.
