Are we only allotted several fields per section, i.e...... I created a new section and dragged the City, State, Zip from another section only to find I had no more in my tool box to replace them? Can I create another field in my toolbox to click and drag into a section?

When you created your screen, you may have noticed each screen is built off of a table. Each screen you are customizing will display fields form the table that it was built on. Having said that, each field can only be used once which makes senses because one city field can only save one city name per record. If you have used all your fields found in the toolbox then maybe you need to add more fields to the table.
This should get you going in the right direction.
